Culinary Arts

A reputation for serving good food is essential to the success of any restaurant or hotel, whether it offers exotic cuisine or hamburgers. Chefs, cooks, and other kitchen workers are largely responsible for establishing and maintaining this reputation. Chefs and cooks do this by preparing meals, while other kitchen workers assist them by cleaning surfaces, peeling vegetable, and performing other duties.

Chefs and cooks are often responsible for directing the work of other kitchen workers, estimating food requirements, and ordering food supplies. Some chefs and cooks also help plan meals and develop menus. Although the terms "chef" and "cook" are still used interchangeably, chefs tend to be more highly skilled and better trained than most cooks. Due to their skillful preparation of traditional dishes and refreshing twists in creating new ones, many chefs have earned fame for both themselves and the establishments where they work.

A comfortable room, good food, and a helpful hotel staff can make being away from home an enjoyable experience for both vacationing families and business travelers. Hotel managers and assistant managers help their guests have a pleasant stay by providing many of the comforts of home, including cable television, fitness equipment, and voice mail. For business travelers, hotel managers often schedule available meeting rooms and electronic equipment, including slide projectors and fax machines.

The median earnings for Restaurant Cooks is $7.81 per hour. The median earnings for Bakers is $8.17 per hour. Executive Chefs in elegant restaurants make significantly more. Median earnings for Restaurant Managers is between $19,820 - $34,690.

Hospitality

Hotel managers are responsible for keeping the operation of their establishments efficient and profitable. In a small hotel, motel, or inn with a limited staff, the manager may oversee all aspects of operations. However, large hotels may employ hundreds of workers, and the general manager is usually aided by a number of assistant managers assigned to the various departments of the operation. In hotels of every size, managerial duties vary significantly by job title.

Median earnings for Hotel Managers is between $19,000 - $34,000, plus bonuses and travel perks.

Dietitians & Nutritionists

Dietitians and nutritionists plan food and nutrition programs and supervise the preparation and serving of meals. They help prevent and treat illnesses by promoting healthy eating habits, scientifically evaluating clients' diets, and suggesting diet modifications, such as less salt for those with high blood pressure or reduced fat and sugar intake for those who are overweight.

Dietitians run food service systems for institutions such as hospitals and schools, promote sound eating habits through education, and conduct research. Major areas of practice are clinical, community, management, research, business and industry, and consultant dietetics.

Median earnings for Dietitians is between $28,010 - $42,720 per year.

Programs in Culinary Arts/Food Production are offered at Antelope High School, Cibola High School, Kofa High School, Vista High School, Salome High School, and Yuma High School. A Hospitality program will be offered at Parker High School, beginning in fall of 2001.

Your high school Culinary Arts/Food Production program provides you with a solid base for several career paths, depending on your career goals. Talk with your high school vocational instructor for the specific classes you should take to best prepare you for your future.
